This unique vinegar is produced by the Guerzoni family in the Italian region of Emilia Romagna. The process begins with the ancient craft of slowly cooking fresh grape must (in Italian, Mosto Cotto) in huge kettles and reducing it to a rich liquid. The cooked must is fermented and acidified in oak casks, and aged for about seven years. Now you can enjoy this traditional specialty in its purest form. Selected grapes (Salamino, Fortana, Trebbiano Bianco and Lancellotta ) produce a vinegar that is high in sugars and low in acid. Not to be confused with balsamic vinegar, which is made from Trebbiano grapes only, this vinegar has a complex, unique flavor, unlike any other. The uses of Guerzoni Sweet Grape Vinegar are limited only by your imagination: Use as a condiment at the table on meats, fowl, and roasted vegetables. Delicious on salads and in marinades. Biodynamic® agriculture is a step beyond organic, and was developed decades before the organic movement began.
